Healthy & Simple Recipe: Dairy Free Chocolate Pudding with Raspberries

I should start this post out by saying I did not invent this recipe. But it had to be shared, because it may very well be the simplest and fastest [and dare I say healthiest?!] dessert I've ever tried.  I discovered the recipe a few weeks back on one of my favorite sites, A Beautiful Mess, late one night while I was craving something sweet but had zero desserts available.  The torture! I read over the ingredients list, and it seemed too simple, and since I happened to have all the necessary parts handy, I whipped it up right then and there.

Here's my breakdown of the recipe [adapted from this post- definitely check it out for the awesome recipe photography!]:

Dairy Free Chocolate Pudding with Raspberries

  • 1 ripe avocado
  • 1/2 cup unsweetened almond milk
  • 1/4 cup agave [I use agave in everything! But honey or stevia or another sweetener would work just as well I'd imagine]
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon vanilla extract [I sometimes like to go heavy on the vanilla, simply because I love the smell, so add to your liking!]
  • 1/4 to 1/2 cup raspberries, rinsed

Combine the avocado, cocoa powder, agave, vanilla and almond milk in a blender. [if using a powdery sugar substitute, make sure to dissolve the sugar with the almond milk and let it cool before placing in the blender]. Spoon pudding into your serving dishes [when I made it, I used two large ramekins], cover and chill. Once it's chilled to your liking, it's ready to eat! I love piling raspberries on top of the pudding, but any other berry would be fantastic, or even something with a crunch like chopped almonds, yum!

I love that it's one of those 'throw everything in the blender' recipes, because it really is foolproof.  I couldn't believe how quickly I put together this yummy treat! I should have done an official time check on it, but it had to have been under 5 minutes from start to finish.  What's more is it's actually a healthy treat, something you rarely think goes with the word 'chocolate'. You can add extra sweeteners to your liking, but it's still a must try in my book. Next time you're in need of a quick chocolate fix, try this recipe! Happy weekend! :) -Jo
